You’re going to want to start out with a chilled, crumb coated cake. If you’re not sure how to crumb coat a cake I teach you how in my course Cake Decorating: Beginner To Pro which is a series of 5 workshops where I teach you my secrets for baking and decorating amazing cakes, step-by-step… even if you’ve never baked before!

Pro Tip: Just make sure the color of your frosting for your crumb coat is the same color as your rosettes, so you camouflage any gaps that will inevitably happen in your design.

So… how do you create a rosette?

  1. Hold your piping bag perpendicular to your cake and slowly pipe a spiral starting in the center and work your way out. Make sure you start your first rosette about a 1/2″ above the bottom of the cake.
  2. At the end of your rosette stop squeezing and continue to move your hand in the direction you were pipping until the buttercream stops coming out.
  3. Try and make all your rosettes the same size, and for a uniform look make them all in the same direction.

If you haven’t tried this before, go ahead and practice a few rosettes on a plate or a piece of parchment paper. You can practice for as long as you’d like, just place the frosting back into your bowl, or piping bag.

Pro Tip: Your hand can warm the frosting up, which will effect the outcome, so try not to hold the bag for too long.

How To You Decorate A Rosette Cake?

  1. Using an offset spatula, evenly space your cake into three sections – horizontally. This will help you keep each row level, and the same size.
  2. Start your spiral in the center of each section.
  3. If you’re creating and ombre look be sure to make 4 different colors, and start with the darkest color, or lightest color first.
  4. If you’d like to hide the tail of each rosette, under the next rosette, end your rosette at the center of the next rosette.

What do you think? Sounds pretty easy right?
