The night before Thanksgiving I decided last minute (super last minute…I should have gone to bed!) to make some peanut butter granola to enjoy on Thanksgiving while everyone else ate their Pumpkin Pie! I’m glad I have been off dairy for almost 3 months now, if it only a week it would be a lot harder. I’m used to it now!
1 cup oats
1/4 cup agave nectar/honey
1/4 cup creamy peanut butter
2 Tbsp brown sugar
1/4 tsp ground cinnamon
1/4 tsp vanilla
(optional) 1/3 cup raisins or chocolate chips
How to make it:
Preheat oven to 325 degrees.
Spray cookie sheet with non-stick cooking spray and set aside.
Combine peanut butter and agave nectar in a bowl and microwave until peanut butter melts (about 20 seconds). Stir.
Stir vanilla, brown sugar and cinnamon into peanut butter mixture.
Add oats and stir until oats are completely covered in peanut butter mixture.
Spread out oat mixture onto prepared cookie sheet and bake for 7 – 8 minutes until granola is slightly browned. Add raisins the last minute or so.
Let cool until granola is crunchy.
As easy as that! Now enjoy!
TIP: I like my granola chunky, so I usually mash it together with a fork immediately after taking it out of the oven. It also works if you keep it more together during the cooking process, instead of too spread out!
