My sister-in-law makes a killer Fruit Pizza every time we get together as a family and I had to have the recipe so I could share it with you! It’s my favorite. I love sugar cookies, fruit, and especially love glazes, so naturally this Fruit Pizza is just for me!
Fruit Pizza {Easy Recipe with Cream Cheese Frosting and Glaze}
Fruit Pizza! An easy recipe with cream cheese frosting and glaze. Use refrigerated sugar cookie dough or make your own.
Ingredients
- 1 – 16.5 oz package refrigerated sugar cookie dough, prepared according to packaging instructions.
- 1 – 8 oz cream cheese, softened
- 1/4 cup confectioners’ sugar
- 1/2 teaspoon vanilla extract
- Fruit you want to top your Fruit Pizza with
- Strawberries, bananas, blueberries, canned mandarin oranges, kiwi, peaches, pears, pineapple, etc.
For the glaze:
- 1/4 cup sugar
- 1 T cornstarch
- 1/2 cup unsweetened pineapple juice
- 1/4 cup water
- 2 T lemon juice
Instructions
- Prepare sugar cookies, either as individual cookies, in a pie pan, individual tarts, or as a pizza crust.
- Glaze: In a small saucepan combine sugar, cornstarch, pineapple juice, water and lemon juice until smooth.
- Bring to a boil. Cook and stir for 2 minutes, or until thickened. Place the glaze in a small bowl and refrigerate until it is cooled, but not set.
- In a small bowl, beat cream cheese and confectioners’ sugar and vanilla until smooth.
- Spread cream cheese mixture over top of cookie(s)
- Arrange fruit on top then drizzle the glaze over the fruit.
- Refrigerate for 1 hour or until chilled.
- Enjoy!
